Another good source can be public scandals. In Germany, there was a large groundswell of politicians resigning due to plagiarized Phd-theses. There even exists a public website (attached) searching for more and publishing information on cases. It is solely in german, though.
The people of arXiv made a study of the preprint published on their site, maybe there is also follow-up work to be found. This sound a bit like what you are planning to do.

Yes. For examples of plagiarised papers, search for retraction notices.
So-called '% plagiarism' cannot be measured by programs for Physics, CS and Mathematics papers because a simple unattributed swapping of variable names will fool a program.
Anyway, in any field, a similarity does not necessarily mean plagiarism.

I also recall a rather productive person several decades ago, in the field of discrete math, I think, although all his papers were forgeries - completely stolen. I think he is easy to find in Mathematical Reviews, with many hits. And misses. :-)
