From experience in hydrocarbon indusutries I can say that velocity generates turbulence and hence stablised annular or straightified 2 phase flow get disturbed and turn it in to slug flow region. Reason might be differences in densities, viscosity, velocities, drag coefficient between gas and liquid phases.
