Determination of residual bicarbonate in bread?

Hello, I want to determine residual bicarbonate in bread. I think there is not a reliable method for the determination of this compound. do you have any recommendation?? thanks

What I think is Dithiothreitol. As it is water-soluble and does not form a precipitate. But, the thing is it contains sulphur which is quite hazardous to aquatic animals.
