If I have understood properly, you are trying to extract some organic compound / product from aqueous solution with ethyl acetate (EA).

If this is the case, you need to do the extraction couple of times, combine the organic layer. This organic layer will contain some water. Most of the residual water can be  removed by giving the combined EA layer a washing with saturated aqueous sodium chloride solution. You may then concentrate the EA extract as per your analysis requirement.

It may be worth to consider liquid-liquid extraction assisted by NaCl (salt and/or saturated brine) (*). The organic phase can possibly be complementary washed with CaCl2 brine, before being dried with K2CO3, CaSO4, MgSO4, or Type 4A molecular sieves (**). Chloroform can be used to facilitate further extraction of residual ethyl acetate from the aqueous phase.
