I returned to answer my own question here. I have found two resources which are helpful for others with the same question. In fact I now believe the acceptance rate is one very relevant metric which most journals are careful to keep obscure.

(will work for some elsevier journals)

http://www.medsci.cn/sci/

(Chinese database in Chinese which will give several metrics per journal including some note on acceptance rates. However how they obtain the metrics is, as usual, not transparent. I believe their data is based on some uncurated local records but still better than none.)

Springer now also has a similar tool for its own journals giving inter alia acceptance rates

Alas there does not seem to exist a central database for acceptance rates, cf.
