CPMAS is specifically for solids and uses the dipole coupling to faciliate the Hartmann-Hahn match conditions between the two spin reservoirs.  The liquid state polarization transfer experiment is call INEPT (insensitive nuclei enhanced by polarization transfer)

In the case of your viscous samples depending on the homogeneous line width of the 1H bath you might get a Hartmann-Hahn match on a static sample.  The problem with MAS of non-solid samples is that the rotation of the sample may displace the sample from the rotor.  Slow rotation of 1-2 kHz may be possible with a some samples.  This is something that may be best tested on the bench before loading into the magnet.

You can bench test the rotor in a couple of ways.  The first would require you have a bench stator assemble that is used for testing rotor packing.  If you don't have that apparatus then the NMR probe is the test apparatus.  Using a lab stand as a holder for the probe allows you to test it with shield off the probe.  It is easier to listen to the rotor via audio (hearing) for any wobbles or chirps from unstable rotor rotation.  Also you can use a whip antenna  for pickup of the electrostatic charge from the rotor and see it's signal on an oscilloscope.  This is the basis for rotor frequency measurements when an optical encoder is not present.

INEPT can be thought of as the CP equivalent for liquids. However, you will need an HR-MAS probe (http://citeseerx.ist.psu.edu/viewdoc/download?doi=10.1.1.466.9110&rep=rep1&type=pdf) if you are looking to run a gel-like/liquid sample in a rotor. You cannot do solution-state experiments (eg INEPT) in a standard solid-state probe, and you cannot do solids experiments (CP) on a HR-MAS probe. You might wreck the system if you do, because power requirements are vastly different.

Only very recently (last 2 years) Bruker has introduced a Comprehensive Multiphase probe on which you can all phases simultaneously. You can try CP on your samples, but you will likely only see signals from the most rigid fractions, which are solid like. You will see nothing from the liquid-like phases.
