Deep frozen, chickens can be stored over about 1 year and more. Chemistry does not completely stop, concerning microbiology, gram positives stay on the same quantitative level, gramnegatives decrease slowly, but do not disappear completely.
Thawing: In a fridge roughly 24 h, when it comes to whole chickens.

yes indeed. The mass of turkey muscles is much higher. When analysing frozen turkey carcasses, time should be doubled.

Freezer burn occurs under the condition, that water evaporates, i.e., vanishing directly from frozen intgo gaseous status. Happens, when the tissue is not covered by packaging material.
