First identify all spatial parameter which effect the wheat production.
if you want to identify wheat then take two season data...wheat season data and other time when wheat is absent.
then delineate wheat....the approach of classification will be hybrid.
you can also use the slope map while classification....make two category one is less than 5% and another greater than 5%. use this criteria while classification.
My study area is Sahibganj district (Jharkhand ), in rabi season there is mix status of crops i.e gram, mustard, wheat, pea etc. so it is quite tough to extract.
If you know the phenology of the crops in your area you can specify the crops which are dominant and in their highest index value or visa versa in order to distinguish between them. You can give different weights for different dates. But this should not work if the crops you want to classify have alike phenological phases like winter wheat and barley.
