Well, a good starting point to look at the process of speech production is the work of Gunnar Fant - in particular, his book "Acoustic Theory of Speech Production".
Another really good book - also providing measures - is Rabiners "Fundamentals of speech recognition".
Maybe this might help as well: "Metrical stress in speech production: A time course study" by Niels Schiller.
Otherwise, for pure measures you can look a descriptions of, for instance, the toolkit PRAAT.
What exactly do you mean by stress? Effort of speech production?
Voice characteristics can be measured of course and there are different spectral properties (e.g. spectral tilt) which tell you something about effort. Is that what you mean by stress? If you redefine your question I can probably give you the appropriate refs you need.
