You can certainly do it, but there is likely to be a considerable error. It depends on what you are try to achieve. Organic matter comes in many forms and some is involved in bonds with clays. Thus there is great difficulty in measuring total carbon content. Included in the sediment can be plant material, and lignin does not grind up easily, so it will be excluded in your method. Are you in a glaciated area? Glaciers crush the vegetation as they advance, and incorporate the organic matter in the glacial till. Debris flows transport any vegetable matter that gets in its way.
The method of determination of organic matter also decides what you are actually measuring, so you will need to check out what part of the organic content is estimated by your analysis. Do not use loss on ignition since this adds losses due to decompostion of clay minerals and carbonates to the final total.
