Yes you can use tables from another source in your original work, as long as you cite the source of that information. You need to gather enough information from the original source as is necessary to clearly state to the reader of your work. Follow the guidelines of the referencing and citation style of your scholarly discipline.
There are quite a lot of differences between articles and books. Here is a very general way to look at this:
Articles are used to present original research. That research can be conceptual (I.e. a discussion of ideas), quantitative research (collecting data and using statistical analysis), or qualitative (an analysis of dialogue and/or observation of human behaviour or some other natural phenomena), or a combination of those mentioned.
Scholars usually aim to have their articles published in peer reviewed journals which means they are assessed to meet particular standards before they published.
Books are not usually assessed by scientific peers, but publishers may require the authors to follow certain guidelines. Sometimes they do this by appointing an editor and seek to have that person check the work of submitted by several authors, which become book chapters.
