You can cut bread with scissors, but usually a sharp knife is better for that purpose. You need to use general information sources (like Wikipedia) to find out what the products you mentioned are about. MATLAB for example is a very robust mathematical toolkit.

I know of colleagues who will use data analysis software for literature reviews, but they tend to use NVivo or other qualitative data analysis. So, it will come down to what type of information you are looking to extract. Typically for literature reviews, we look for themes across the research/articles/books, which is where a qualitative data analysis software can work well with the richness of data.

With the exception of Mendeley, all of the programs you have listed are for quantitative data analysis rather than anything related to literature review.

All of the major qualitative data analysis programs (ATLAS, Dedoose, MAXQDA, and NVivo) can help with literature reviews, so if you have one you are interested in, check their online tutorials. Or, a good place to start for a general orientation is the two-part YouTube series, "How to use NVivo for your Literature Review."

Given that qualitative data analysis is about specific content/nuances and often involves coding data line by line, the software you listed isn't going to help with that. I often will copy + paste sections of the data I have into an excel spreadsheet so that evidence for a certain theme can be in one place, but that is organization, not actual analysis.
