1. No, you do not have to use computer software, but if you have very many interviews, it will become difficult to keep track of them all. The main advantage of such programs is with regard to data management, since none of them will actually analyze the data for you.
2. Simply keeping notes rather than recording is more problematic, because you are quite likely to miss things. Imagine that in your 4th or 5th interview that participant convinces you that something you had be ignoring was indeed important, then without a recording of the previous interviews, you would have lost that data.
Of course, if there are ethical problems in doing interviewing, that is a different matter, because the hand notes would be the best data that you legitimately gather.

First, qualitative software essentially does not analyse your data. Qualitative software such as NVIVO only helps you to organise your data. You as an analyse does the analysis. This is one of the ways they differ from quantitative software like SPPS. The benefit is that it makes analysis easier in many ways. Second, I don't think you will be able to take note of everything said during interviews. It is better to record interviews if the participants permit that.
