I read that most previous studies used glass fibre thimble instead of the cellulose thimble.
The solvents are methanol, acetone, hexane, toluene, dichloromethane, chloroform.
If I use cellulose thimble, will these solvents dissolve the cellulose and influence/contaminate the synthesized polymers?

I have used cellulose thimbles for polymer extractions in the past. Should be fine to use, I have experience with chloroform and THF as solvent. Hope this helps.
As the folks above have stated, you should be OK with those solvents and cellulose thimbles. You might want to run the extraction procedure on the empty thimble prior to using them, just to make sure no traces of extractables contaminate your product. That is, place the empty thimbles in the Soxhlet apparatus and reflux the solvent through them for a period before you use them.
