Fruktan can be hydrolysed by acids, but fructose is degraded by the acid and will not be found in the hydrolysate. The glucose will still be there if you have moderate concentration of acid, but the level of glucose depends on your fructan. The best way to hydrolyse fructan is by fructanase.
