My 3rd year undergraduate project is on 'Simplified Formulas for Power Yield from Wind Turbines'. I am in the phase of looking for established papers that contain relevant information relating to power equations and the factors and parameters affecting the power coefficient.

This is something that I've read when I had the similar issue of understanding the power production from wind turbines.
You could search for the paper - "Effects of design parameters on aerodynamic performance of a counter-rotating wind turbine".
The paper shows very clearly the importance of Cp and what factors influence the production and Cp.
I hope, the paper helps you to become more acquainted with the concepts of Cp.
You might also wish to review Chapter 3 of "Wind Energy Explained" by Manwell, McGowan, and Rogers. An essential difference between the two designs is that a HAWT derives power mostly from lift, while a VAWT derives some or all power from drag; this is why HAWTs generally have larger values for Cp.

Chapter 4 "Wind-turbine Performance" of Tony Burton et al.'s book "Wind Energy Handbook".
Chapter 3 of "Wind Energy Explained" by Manwell, McGowan, and Rogers.
I suggest the second over the first, I find it to be easier to understand because it is underlined very well.
