I'm looking for dyes (preferentially water soluble) that are quenched by the presence of calcium, magnesium, barium, etc. (If other transition metals quench the fluorescence it would be fine, but it needs to exhibit fairly stable fluorescence in the presence of considerable amounts of sodium and potassium.)

If you are looking for fluorescent probes, in my experience, aromatic crown ethers (or crown ethers which bonded to aromatic cycles) and porphyrins, beside their well fluorescence emission, have the ability of trapping metal ions, and this make them suitable to be used as metal ion sensors.
