I have found Andrew Gelman's Bayesian Data Analysis book to be very useful and relatively gentle.

It has a focus on applied statistics, and model building/testing.

I don't recall how many examples use educational research (if any).

I'm sure others besides Gelman have useful content for you, but personally I like the style of his textbooks/papers/blog.

I have very good experience with Gary Koop’s "Bayesian Econometrics". There are many practical examples, codes etc.

And, my students like the form how Gary presents the Bayesian stuff.

Strongly recommend McElreath's Statistical Rethinking, it is very intuitively written without inappropriately simplifying the math
