To have a fermentation, you should have humidity. Did you check the humidity of your pellets in the package?
To have a fermentation, you also need microorganisms.
If you have humidity, your intragranular temperature of your material was not so high than you believe. It is depending of the size of your particles. So some bacteria, sporulating bacteria or spores from mushroom can resist.
So, if your drying is not correct, you have humidity and microorganisms.
