We are developing a project plan to look at all aspects of kombucha fermentation from SCOBY to final fermentation vessel design. I would like to connect with you and have some discussion if you are interested.
Looking to validate the CCP's that are now currently being used by processors or developing more effective CCP's for all aspects of the process. With the data collected during the studies we hope to create a best practices document, and possibly a number of papers. We are also now working with a couple other researchers to run genomic studies on the 6 different "SCOBY" to be used in the various aspects of the study.
