I don't have any model/theory in particular. But what we are doing at the moment are exploring Microsoft 365 education & GSuite. They are online platforms for virtual classrooms. You can go for online as well as remote T&L
Besides that, you might want to explore the use of video apps such as Zoom, MTeam (a part of ms 365 education), webex etc (just to name a few)...

I think that whether or not the class is online, student-centered active learning grounded in cognitive psychology and constructivism should always be the starting place for instructional design.
Separate from that, here is a model for curriculum design that incorporates technology, up to and includes 100% online classes. It is focused on language learning because that was the subject of the book, but the same processes would be true in any field,

Hello. Methods used in distance education: discussion, case study, problem solving, demonstration, project-based learning, self-study and collaborative learning. Especially if the courses are practical, project-based learning and self-study are more appropriate.
So I agree with Dr. Michael W. Marek In this part, because teaching centered around the student is the only way to achieve all of the learning satisfactorily for the teacher and student.
Keep students involved from the beginning of class by telling them that you will be asked about X and you about Z..... and so forth. Doing so will keep them concentrated.
