I am aware of a paper where a version of a two-process sleep model has been interpreted as a discontinuous logistic map and various stages of polyphasic sleep emerge as bifurcations [http://arxiv.org/pdf/1311.1734.pdf].
Are there any other models like this?

The paper is an experimental study. I was interested in a theoretical construction called logistic maps applied to sleep-wake cycle.
