My dear , it's due to tri and diterpenoids and If u want to isolate coumarins it by aqueous extraction, acid base neutralization and separation can be done by using silica gel and sephadex or reverse phase purification and If u don't want isolate u can characterise by GCMS
The class of secondary metaboliotes responsible for aromatic flavours are mostly the Terpenoids especially the diterpenoids and triterpenoids
