Are you asking about nutrition of the trees themselves, or the nutrition provided by the fruit to the consumers?
Why are you limiting yourself to books "only about" fruit trees when other works might also contain useful information?
Plant Analysis Handbook III (2014) ed. Bryson et al. Micro-Macro Publishing is a reference book that contains an entire chapter on fruit and nut crops, but as you only want books "only about all fruit trees", I won't suggest this or it's later editions.

I want a reference book or books about all aspect of nutrition for fertility, growth, production, development and fruit yield and quality fruit trees themselves.
I have already read the following books But they are often about crops, not especially for fruit trees!
Marschner's Mineral Nutrition of Higher Plants - 2012 .ed
Handbook of plant nutrition - 2007 and 2015 .ed
and Mineral Nutrition of Fruit Trees - 1980 that is also relatively old
