The placement of these sensors directly in the gravels will crush them. Another issue is its efficient contact with the gravels. If the diaphragm of the mini cell is not in contact with the particles i.e. if it is inside a void, it might miss some important data.
Try potting the sensor in something flexible like PDMS. The force will be redistributed around the sensor but it should still be able to give some sort of relative stress measurements.

The measurement range is up to 10 kg, so they could be robust enough for your application.
Like in the previous comment, I would also advice to embed it into some flexible gel : it will average the stress over a certain area, which is practice should be large than the size of an individual graver.
