This is to seek suggestion for my Phd research.
I have four IDVs constructs related to consumer confidence and I am testing their impact on Consumer Involvement. All items are on Likert scale.
Also, I want to study the impact of demographics on the four IDV constructs. (Literature suggests that demographics are predictors of consumer confidence)
1. Pls suggest if AMOS will be better than Smart PLS in my study?
2. Also would be grateful for suggestions for papers and articles for studying the methodology.
3. A 5 point likert scale or 7 point is better? I find people giving different suggestions.

Yes, that's true for 5 and 7 point scale. I think we can use either and support with literature.

Neither; especially if all your variables are in Likert scale.
If you plan to invest on a SEM software for your PhD dissertation research, I highly recommend that you'd consider Mplus (https://www.statmodel.com/). They also have very active user community where you can post questions. Good luck.
Findings suggest that PLS should not be used without further considerations and does not provide evidential superiority to SEM, nor advantages over unit weighting, see Rönkkö et al. (2021) for example. Structural equation modeling on the other hand is very flexible to analyze manifest and latent variables and is also capable of analyzing ordinal variables via robust estimators such as DWLS or ULS. Mplus is a good recommendation by D. Eastern Kang Sim , but if you are looking for something freely available and nearly as powerful as Mplus, use R and the "lavaan" package. AMOS as a SEM tool is only able to handle oridinal data via the "Bayes" plugin, which is not very user friendly, in my opinion, and quite limited.
