If the structure is maintained the clay which has a large internal surface area will greedily take up water again. It's however difficult to predict the take up quantitatively, this depends on the type of smectite (montmorillionite wil take up water into the interlayer) , its grain size, the temperature, moisture content of the surrounding air and the calcination temperature of the clay.
