I am working on subroutines (UMAT and others) with Abaqus.
I would need to calculate the average stress by element to eventually change its Young modulus.
How should I implement that calculation ? Is there a way to calculate everything at the nodes ?

In the UMAT subroutine, you can access the stress tensor at the integration points using the STRESS variable. To get the average stress for the element, you need to average the stresses across all the integration points. The number of integration points per element depends on the element type. You can use a loop to iterate through the integration points, sum the stresses, and then divide by the total number of integration points. Once you have the average element stress, you can use that to update the element's Young's modulus by modifying the STATEV (solution-dependent state variable) in your UMAT. Calculating at the nodes is possible using the NDLOAD variable to access the nodal forces, but you may need to interpolate from the integration point stresses.
