It was assembled into a coin-type half-cell in a glove box, with a lithium foil acting as counter electrode and Celgard 2325 polymer as separator，1.0M LiPF6 in EC:DEC=1:1 Vol% as electrolyte.
Check the properties/impurities of your electrolyte. It seems to be decomposing at that stage causing continuous and fluctuating charging. Additionally, you can open that cell to check and analyze what happened.

I think 1.0M LiPF6 in EC:DEC is a general liquid electrolyte that can stand up to 4 V (vs. Li+/Li) or even more. Therefore, make sure the salt was dried and the electrolyte was prepared properly. You may check the H2O content by the KF titration method. Additionally, the cathode preparation also needs to be considered.
For post-analysis, you should check whether the color of the electrolyte (or separator)is changed. And the GC or LC analysis may be suitable.
