If the temperature of the caffeine solution (about 5-10 g/L) is going up to about 100-150 degrees, the bubble-like foam is much generated.
Is there a reason? is it related to surface tension or viscosity?...

might be some compound similar to lignin is released from the coffee which is a surfactant
Hasan Bobat Thank you for the reply and comment. But, My solution is not coffee, but just a dissolved caffeine solution with a concentration of 10 g/L. I used solid caffeine crystals.
Maybe at higher temperature caffeine molecule released from crystals so its act as surface activite molecule like surfactant.

Not only surfactant are surface active their are such molecule like polymer, solid Particle, protein are also act surface active. So in your case caffeine molecule is such type of molecule. Coffee oil as a natural surfactant. Please go through this article.
