assuming the polymer material on GCE, you are performing the electrochemical measurements in three-electrode setup. One of the key factors is the mass of the electrode active material. If it's low (~1-2 mg) then the ion transport pathways are efficent during charge-discharge cycling, thus the high stability is observed. Moreover, addition of binders (like PTFE, Nafion) may decrease the overall electrode conductivity which can influence the electrode cyclic stability as well.

Does the structure of coordination polymer or MOF affects its binding affinity on the glassy carbon electrode ??

If you mean surface structure then I think it does. I've had tried my own materials (conductive polymers) to put on the GCE with various results, some were okay, some didn't stick to the GCE.

Metal Organic Frameworks (MOFs) are[1] compounds consisting of metal ions or clusters coordinated to organic ligands to form 1D, 2D, or 3D structures.
