why gallic acid is selected as standard for determination of TPC and Catechin for TFC?

These and quercetin are cheap and commercially available. The products of their oxidation are relatively stable. These polyphenols are soluble in water after pH adjustment. They and their products don't absorb much in visible wavelengths.
