Why does my blood agar plate change color to something like chocolate agar plate after incubation?

My blood agar plate turns to chocolate agar plate after being incubated at 37 degree Celsius for 24 hours. I cooled down the NA agar to 50 degree before adding the defibrinated sheep blood. What could I do?
