Why do we follow the mono-window and split-window methods in the retrieval of LST from Landsat 8/9?

I am intrigued by the fact that the mono and split-window approaches are followed in LST retrieval even when we already have 30-meter Landsat 8/9 Collection 2 Level 2 Tier 1 surface temperature data.

The dataset can be easily accessed from the Earth Engine Data Catalog.
