It depends on your research questions, research design, sample size to choose suitable analytical techniques.
You could do pre- and post-knowledge tests of the subject matter.
You could also do qualitative research by asking about student responses to the online learning; i.e., did it hold their interest, do they feel that they learned as much as they wanted/needed to learn, what was easy, what was hard, what suggestions do they have for improving the experience?
