Please, which grade of Whatman paper is preferred to use for making disks for assessing antimicrobial/antibacterial activity? There literature cites many, but usually, the authors just use what they have in their lab.

Since the thickness and texture of paper influences diffusion of the antibacterial under investigation, I would recommend to use blank discs of a commercial manufacturer of Kirby-Bauer discs.
