During the sensor readings, I became worried in seeing 0s. Did those children had their best experience of their life?
By GSR do you mean Galvanic skin response? Not sure in what units your device outputs the data, but if its microsiemens then it really never should go to zero. There are certain percentage of population that do not have EDA responses, but still the underlying signal level should be there.
So, my hypothesis is that unfortunately something went wrong in the recording of the data.
I still don't know the unit of measure. I don't find the notification of the open source hardware clear.
Could you tell a bit more? What open source hardware(?) are you using? How and where did you attach the gsr sensors?
I use the groove GSR sensor. I attached the electrodes on the fingers how I saw in the literature.

It seems like it is actually outputting the skin resistance instead of conductance. Usually GSR (or EDA, or SCL) is measured as the skin conductance which is reciprocal to its resistance. Meaning here that usually when you interpret GSR data, when the values goes up it means arousal of the subject goes up.In the examples on that page though, when he indicates a moment of high arousal, the graph actually goes down.
If this Grove device indeed reports the skin resistance and not skin conductance values, then the lower the value, the higher the arousal. Then that 0 value would mean there is very little resistance, which would mean very high conductance... Sorry, can't help you more, I've never really worked with self-made device like this.
Some people just do not have skin conductance high enough to be measured by some of the devices. The real question is - what is the precision of your sensor. Would it allow to measure values of less than 0,3 microSeimens? If not, you might get zeros. People differ a lot in reactivity and some simply do not sweat much. I have experienced some similiar cases in my experiments.
If the electrodes were placed in the index and middle fingers and the participants had to perform a task that involved finger movement (i.e typing), it might be the case that the electrodes were not always in touch with the skin and that is why you might be getting 0s. There is a very nice book about EDA which is unfortunately expensive for an individual to buy. Check your University Library if they have the book of Wolfram Boucsein called "Electrodermal Activity".
