I have to say that in 3D printing systems then thixotropy (hysteresis in the shear-viscosity profile) is a major factor to consider and a simple viscometer won't (IMHO) address your requirements.  You should consider a rheometer such as the Kinexus.  Money is not the prime consideration here - if it's free and doesn't do the job, then it's too expensive...

in my lab, we use a standard research grade rheometer - costing in the range between 50000 and 100000 € including basic accessories. Important for your applications is that you use a Peltier temperature controller and you need a set of suitable geometries (8 mm for compression and very small samples, 25 mm for standard samples (high viscous solutions and melts (not an issue in your case), as well as 50 mm geometries for low viscous solutions (water-like viscosities). Please be aware that some manufacturers use slightly different diameters (10 vs. 8, 20 or 35 vs. 25, ...).

I have experience with Anton Paar MCR 302, Malvern Kinexus Pro and TA Instruments AR-G2 for use on hydrogels. All of them do their job sufficiently well, to get high quality data for publications. I don't have sufficient experience with a Thermo Haake Mars. However, in my experience, in most cases, hydrogels and polymer solutions are quite tricky to characterize, especially in comparison to polymer melts. So lots of knowledge is required to get reliable data out.

With this equipment, you can basically measure anything in rheological flows. Only for elongational measurements you will need to buy an expensive addon or a separate rheometer with a suitable oven.

If you buy QC-viscometers, you'll probably regret it sooner or later, as they are very much limited in terms of possibilities.
