I had an XY table that I mapped, and I have successfully interpolated 26 other maps from the same data set. For some reason, a few of the maps are not showing the appropriate variation, rather it is only showing a single value for every point.
It would be easier to find a solution, if you could give a sample dataset from that particular column. Check whether your z column (value column) has been converted to integers, and you've lost all the decimal values.
It would be better if you could show the data set. If variation in data set is low, try changing the classification interval to higher.

Thanks all for the suggestions. Variation and intervals don't seem to be the problem; whenever I go to statistics under symbology, the correct range appears for the interpolated raster. However, when I extract values or display the layer, it only shows the median.
