As the title says I would like to know what physiology textbooks would a medical physiology lecturer/ class coordinator have as their go to textbooks including lab protocols.

We used this textbook: Ganong WF. 2005. Review of medical physiology. 22nd ed. New York: Lange Medical Books, McGraw-Hill.
These textbooks are very useful:
Boron W, Boulpaep E. 2002. Medical physiology. New York: Saunders.
Hall JE. 2016. Guyton and Hall Textbook of Medical Physiology. 30th ed. New York: Elsevier. (and all previous editions)
Sherwood L. 2010. Human Physiology. From cells to systems. Brooks/Cole.
We also commonly use the books mentioned by Piotr . The best books are from McGraw-Hill and Elsevier.
Just go for Guyton and Ganong recent editions that is what you need.
