I'm trying to run SPSS to establish a relationship between a) level of air pollution in Italy (independent variable) and b) the number of COVID-19 cases in Italy (dependent variable).
For my independent variable, I have 100 data entries of different levels of certain gases but all 100 values were recorded over just a span of 3 days. As for my dependent variable, I have the number of cases that came up every day for a total of 100 days. How do I feed this data into SPSS and what sort of test should I run?

Your investigation could be potentially very interesting, though ideally I think you'd get more informative results by tracking air quality and new COVID cases over a longer period of time than three days (weeks or months would be preferred).
That said, one very simple, descriptive approach would be to: (a) average the measurements for each gas on each day; then (b) regress the COVID counts for the day (your DV) on the averaged gas scores (as IVs). Plot these features and interpret the plot(s). The reason I say descriptive is because an effective N of 3 is too few to dependably estimate regression coefficients (it's not even feasible with more than one IV).
A second approach would be to treat each day as a group (the IV), and run a manova on the measured gas readings (as DVs) using however many measurements you had per day/group. Flipping this around, a discriminant analysis could be run (same internal mathematical arrangements of scores into linear composites), such that the gas measurements (now IVs) could be evaluated as to whether they reliably differentiated days (the DV).
