What techniques could be used for quantifying the amount of zinc atoms in a protein?
Some techniques that I could think of are PAR-PMPS assay and atomic absorption.
I would really appreciate any suggestions.

It depends on the limits of detection you want to achieve:
ICP-MS 0.001 ug/L
ICP-OES 5 ug/L
Graphite furnace AA (low ppb)
Flame AA 50 ug/L
XRF 30 ppm (in solid basis)
