Our research will focus on 5 countries and the timeline will cover 5 years. We have to IV, 8 DVs, and some moderating variables. Initially, we will use panel regression analysis but we do not know if we will use OLS, FEM, REM. Can the panel regression capture the effect of the moderating variables or are there any other models that we can for it? Thank you!

I'd have to see the data. Where it came from, how you got it, and what it measures are not the important factors in selecting a regression model. You need to be asking: How does it vary? Does it contain noise? Is it constantly rising or falling? Does it oscillate above and below some constant value? Does it exhibit asymptotic behavior? These are the questions you should be addressing.
