I can personally vouch for the book by Bruus and Flensberg that you mentioned. It is thorough enough for learning many of the classic many-body perturbation theory tools, such as Feynman diagrams, Fermi liquid theory, Green's functions and Matsubara frequency summations, but also concise enough to be covered in a single course (maybe not from cover to cover, but with a sensible range of topics). 

One classic text that I like is "Quantum Theory of Many-Particle Systems" by Fetter and Walecka. It is more thorough in the derivations, but may be too long for a single course because of this. It can be still be a very useful reference for, e.g., learning Feynman diagrams for the first time.

I agree with Dr. Kuopanportti. In addition, I would suggest the textbook "Many-body problems and quantum field theory: an introduction" by P. A. Martin and F. Rothen, which is concise and clearly written. A detailed exposition in particular of the Fock space formalism can also be found in the classic book "An introduction to relativistic quantum field theory" by S. S. Schweber (Chapter 6).
