There is no reported structure for Okra mucilage. One of my PhD student is also working on it. If you want to find out the structure, first find out the monosaccharides in the mucilage by hydrolysis followed by TLC using standard monosaccharides. Then, you can go for determination of the each monosaccharide quantitatively. This gives approximate idea about the structure. Then, you can go for IR, Mass, NMR, etc., for structure elucidation.

For linkage analysis you could methylate the polymer and subsequently hydrolyse and analyze by GC/MS. I have not done it myself yet, but it seems to be a popular method.

One of my student has done this methylation analysis for another natural polymer on which we were working. It is works well. We used it for some other purpose.
