What is the scientific reason behind carrying out assays (eg. osteogenic assays) for time period of 21 days?

Is there an explanation for carrying out biological assays for 21 days? specifically assessing differentiation like osteogenesis. Does any mechanism or expression occur which has made the time period of 21 days to be used universally?

It is accepted that by d21, all cells in monolayer shows full mineralization, but you can see partial color in dish or partial ossified after 10 days. It looks it starts on day one and completes mineralization by day 21. In between you will see partial. I can think of mineral is added one atom at a time and it takes 21 days to complete mineralization of whole cell.
