The effect could be two fold: the screening of charges may facilitate closer interactions between peptides which otherwise would be restricted due to electrostatic repulsion. This means an increase in the assembly kinetics. Secondly, due to less charge and hence less electostatic repulsion, the aggregation may be more random i.e. the morphology of the aggregates could be modified. I have worked on Beta lactoglobulin (B-Lg) nano fibrils which consist of peptides of this protein.
