The glossy appearance of biomass pellets is due to lignin. The high pressure process of pelletization partially "melts" lignin which not only helps to bind the pellets but creates the shiny or glossy appearance.

I agree partially with Dr. Nyakuma, but it is the temperature that leaves the lignin more fluid (glass transition point). The friction of the particles with the pelletizing matrix increases the temperature.
