I have started to analyze the data with thematic analysis by Clarke n braun but it seems quit unstructured for a dissertation defense
Please guide me some other options or should i stick with it???
I agree that Braun and Clarke's thematic analysis is a great deal more unstructured than it's six-stage approach makes it appear. In particular, it gives you very little practical guidance about how to locate or generate themes.
But their approach is explicitly designed to be used after all your data has been collected, and it would be unusual to wait that long before analyzing ethnographic data. So, it would help to know if you are still collecting your data.

Glaser and Strauss' original work developing Grounded Theory was all based on ethnographic research, so that would a reasonable option. As a starting place, I would recommend Glaser and Strauss' (1967) along with their first substantive book, Awareness of Dying, which includes a brief methodological appendix.
Of the many subsequent books on GT, I would recommend the second edition of Strauss & Corbin (1998). I think the first edition was a bit narrow in its view of analysis, and the subsequent editions were written by Corbin after Strauss' death.
You can analyse it through NVIVO software. You might get the licence from your institution. There are lots of mini videos (youtube) on how to use the software. It is my personal experience and it worked well.
I was wondering if you can analyze the Instagram data as a form of field notes in Qualitative ethnographic observations through thematic analysis.
