In EIS, the amplitude of the sinusoidal perturbation should be studied first to get an optimal value.
Your doing correctly an EIS measurement when the amplitude is sufficiently high without losing linearity.

Would it be appropriate to use linear sweep voltammetry (2 electrode or 4 electrode systems) for measuring the I-V curve?
No need to have the i-E curve. You can check the linearity by just varying the amplitude of your perturbation signal; you are in the linear domain if the impedance is independant of the amplitude.
